Dr. Ellouze is an Assistant Professor, since 2015, at the Institut Supérieur de Biotechnologie de Beja, Jendouba University, Tunisia. She holds an engineering degree in Agri-food Industry (2005) while her Master’s and Ph.D. degrees obtained respectively in 2007 and 2014 are in Agri-Food Science.

Dr. Ellouze was a postdoctoral fellow at the University of Trento, Italy (Alyssa-Erasmus Mundus Fellow), in 2014. She is a member of Laboratoire des Matériaux Molécules et Applications, Institut Préparatoire des Etudes Scientifiques et Techniques, La Marsa since her enrolment in Master’s degree. The research topics she is dealing with include natural products chemistry, secondary metabolites extraction, and purification, biological activities investigation and most of all how to incorporate the extracted valuable components (obtained from natural resources) in different products (food, feed, cosmetics, medicines, crop protection products...).

Dr. Ellouze has a great passion for reading in all the languages- she is fluent in Arabic, French, English, and Italian. She is also fond of traveling and discovering new places and cultures.
